    1. Heat olive oil in skillet to medium heat. Place potato in skillet and cook for 10 mins, until tender but firm. Mix in spinach, green onion & garlic until spinach wilted.
    2. In a bowl mix milk & eggs and pour over vegetables. Sprinkle with cheese, cover and cook for 5-7 mins, until eggs are firm.

    2. Crack eggs into skillet, cook all the way on one side and then flip
    3. Heat tortilla, place on a plate and top with egg mixture, cheese and sour cream
